Southwest Chicken Taco Soup Recipe
Hey friends, I hope all is well in your world- I know this time is trying but we will get through it! If you are like me, you love a good comfort food recipe, when I am in the mood, this savory soup hits the spot. #comfortfoodfix I have not ever shared a recipe before but I LOVE this dish and thought why not?
I took a couple of recipes I liked and blended them up to create my own (in my opinion better,) version of a Southwest Chicken Taco Soup, my family and friends who have tried have all enjoyed (or at least that is what they tell me,) LOL.
This quick and EASY recipe is both fool proof and delicious at the same time!
What you will need: 2-3 chicken breasts boiled and shredded 3 cups of chicken broth or water 1 can yellow sweet corn (drained) 1 can black beans (drained) 1/2 cup white rice 1 block cream cheese 1 cup cheddar cheese 1 packet taco seasoning 1/2 packet ranch dip seasoning HOT Sauce (any brand) Salt, pepper, garlic salt, garlic powder, red chili flakes to taste!
Flour to thicken (optional)
Corn chips (optional)
Directions: Boil chicken (season water) in a large pot and leave 3 cups of broth or add water to make 3 cups in pot. On medium heat add in corn, black beans, rice, seasoning packets, hot sauce as desired, (the more you add the spicier it will be,) and cream cheese.
Bring mixture to a boil and stir often (still on medium heat) for about 15-20 minutes. Add in cheddar cheese and stir until melted. Add flour to thicken if desired.
This recipe makes about enough for 4 people.
You can then enjoy this all season spicy dish by itself, or top with corn chips and avocado if you would like, (my preference as pictured!) Wow your family and friends with this easy recipe!
